Many of you have seen the delicious photos of this week’s Soft Shell Crab specials, and there will be more to come.
Why do we get so excited about these little gems?
Soft Shell Crabs are traditional local Blue Crabs that have been harvested from the water as soon as they molt in order to prevent any hardening of the shells. This results in the entire crab being edible. Blue Crabs are typically in season April-September, but only prepare to molt at the start of the season and the end of the season making the supply of Soft Shell Crabs extremely rare. Much of the harvesting of pre-molt crabs are by accident. Professional crabbers will keep crabs in tanks until they molt, immediately removing them from the water.
